		<description>You could do just about any type that will melt.  Jalapeno pepper, pepper jack, swiss, cheddar, american, mozzarella.  They all sound good to me.</description>

		<description>Anything reasonably soft -- the appeal of the bleu cheese is that it oozes a little. Pepper-jack is one I have used, but plain monterrey jack is good; ditto for mozzarella which sounds like it would be great with the portabella and red pepper.  I&#039;d stay away from goat cheese if she doesn&#039;t like the bleu -- it&#039;s texture and sharpness would likely be an equal turn-off.

		<description>I think that any other good very sharp cheese would accent any burger especially the spices and onion so maybe a swiss or ghouda cheese!!!</description>
